Pixilated Recipes: Gluten-free Apple Pecan Crumb Cake

Howdy peeps! Today is Mabon and I decided to pop in to share the cake I made for tonight's dessert. It's gluten-free and SUPER easy, because I cheated and used a boxed mix for the base of this recipe.  Whatever, it's still delicious!

Gluten-free Apple Pecan Crumb Cake Ingredients:

● 1 Box Krusteaz gluten-free cinnamon swirl crumb cake & muffin mix

● 1 Granny Smith apple (peeled and diced small)

● 5 eggs

● 1/3 c butter (melted)

● 1/4 c milk

● 1/4 c chopped pecans

● 1 tsp vanilla 

● 1 tsp maple syrup 

● dash or 3 of nutmeg

Instructions:

  1. Preheat oven to 350° F and grease an 8 x 8" baking pan
  2. Combine diced apples, chopped pecans, vanilla, maple syrup, and nutmeg with HALF of the cinnamon crumb topping from mix in a bowl and set aside. 
  3. Stir cake mix, melted butter, milk, and eggs together in mixing bowl until combined. 
  4. Fold in the apple mixture. 
    Moira Rose from Schitt's Creek saying "You just fold it in."

  5. Spoon batter into prepared pan and top with remaining cinnamon crumb topping. 
  6. Bake for 40 - 45 minutes until a toothpick comes out clean (I used a glass corningware dish and baked for 45 minutes)

Now let it cool for a bit, then dig in and enjoy!!
